My daughter is the BEST baker. Honestly, she could open up a bakery. She doesn't bake very often, though, but when she does....it's always a winner.
We went to visit a few weeks ago, and she made these awesome lemon cookies. She found the recipe at Fancy Road House.They were so soft and delicious with a mild lemon flavor....and the frosting was so sweet and creamy. I'm not sure who ate more..Brent or ME!
Lemon Cookies with Lemon Cream Cheese Frosting
1 c. butter1 c. sugar2 eggs 2 tsp. vanilla1 1/2 tsp. lemon zest1/2 lemon juice3 1/4 c. flour2 tsp. baking powder1/2 tsp salt.
Cream the butter and sugar. Add the eggs,vanilla,lemon juice and zest. Sift the flour, baking powder and salt. Add to the wet mixture. Wrap and refrigerate 1 hour.Roll out dough to 1/2 in. thickness and cut with cookie cutters. Place on parchment lined baking sheets and chill 10 minutes. Bake at 350 for 10 minutes. Cool completely.
Frosting8 oz. cream cheese, softened1 stick butter, softened1/2 tsp. vanilla2 c. powdered sugar2-3 tsp. lemon juice
Beat the cream cheese, butter, vanilla and lemon juice. Add the powdered sugar. Stir well and spread on cookies.
