Cilantro Lime Chicken Soup

    This is a recipe my daughter cut out of the November 2011 issue of a magazine called Chatelaine.  I've made it twice this winter, and it's very good.  In the introduction to the article they state that researchers at the University of Nebraska have proven that chicken soup works when you're sick because it contains anti-inflammatory properties. They included leeks, garlic, and oregano in their recipe because they are powerful immune boosters. 



Cilantro Lime Chicken Soup
1.   Prepare vegetables:
(1)  Slice 1 leek into thin pieces
(2)  Chop up 1 green pepper and 1 red pepper
(3)  Chop up 2 stalks of celery
(4)  Mince 3 cloves of garlic

2.  Saute vegetables in a skillet:
(1)   Put 2 T of coconut oil into a skillet and sauté  leeks for 1 minutes.
(2)   Then add the peppers and celery and sauté a few minutes until they start to caramelize about 10 minutes.
(3)   Then add the garlic and cook 1 minute.

3.  Prepare soup:
(1)  Add 10-12 cups of water to a soup pot.  Add 1 whole skinned chicken, and let it cook on medium-high heat for about 30 minutes or until the chicken is completely cooked. As it cooks, skim off the foam that rises  that to the surface.
(2)  Add the cooked vegetables.
(3)  Then stir in the spices:  1 T dried oregano, 1/4 t nutmeg, 3-4 T chicken bouillon, and 1T salt.
(4) After cooking for about 30 minutes, remove the chicken and pull of the meat. Stir back into the soup with 1 cup of frozen corn. Cook for about 2 more minutes.
(5)   Garnish with 1/2-1 cup of cilantro and lime wedges.
