While I was in the middle of canning apple sauce a few weeks ago, I got hungry for some apple crisp. This recipe comes from a school cookbook I picked up called The Heritage Cookbook. Since I've had this cookbook for over 25 years, it is definitely one of those tried and true recipes. I like the smell of apples baking, it's one of those homey fall smells.
Apple Crisp
1. Prepare apples: Wash, peel, and slice 8 apples or enough to fill a 9 x 13 pan.
2 Mix together in a large bowl: (1) 4 T gluten free flour (I would put 2 T rice flour, 1 T sorghum flour, and 1 T tapioca flour)(2) 3 t cinnamon(3) 2 t nutmeg(4) 1 t salt(5) 1 1/2 cups of sugar (recipe calls for 2 cups, but I always cut down the sugar.)
3. Add the apples: Toss to coat the apples with this four-sugar-spice mixture.
4. Place in a buttered 9 x 13 pan.
5. Prepare topping: Mix together 2 cups of oatmeal, 1/2 stick of melted butter (recipe calls for 1 stick), and 1 cup of brown sugar (I usually bring it down to 3/4 cup), and 1/2-1 cup of chopped walnuts. Bake at 350 for 40 minutes.
