This s a good way to use up some of those extra garden tomatoes. If you like stewed tomatoes, you will like these cute little mini casseroles.
The top is tasty and crispy, while the bottom tomatoes are warm, juicy, and flavorful. You'll want to eat this with a spoon to get every drop!

6 medium tomatoes, chopped1 small onion, chopped2 tsp. sugar1/4 tsp. salt1/8 tsp. pepper1/2 c. dry bread crumbs (I used Italian and I used more)1/2 c. grated Parmesan cheese ( I used more)1 Tbsp. butter, melted ( I used more)In a large bowl combine the tomatoes, onion, sugar, salt ,and pepper. Put in a greased 2 quart baking dish. Combine the bread crumbs, cheese, and butter, sprinkle over tomatoes. Bake uncovered at 350 for 25-30 minutes until golden brown.
